Greetings, earthlings!
This is my second time in Bali (I was here for most of March last year, too), and while I was up at the Zen Resort in Singaraja (Singaraja means “Lion King,” by the way – how awesome), something miraculous happened. And that miracle was that I tasted the best salad dressing in the world. Every meal, I requested a mixed salad with this dressing. I even had it for breakfast!
This is the kind of salad dressing that turns even the simplest salad of JUST LETTUCE into an otherworldly experience. This is not an exaggeration.
I asked the kitchen staff if I could have the recipe last year, but for some reason, I didn’t end up getting it before I left. I thought about that dressing for the past year, and it was one of the things I was most excited about when I thought about returning to Bali. Seriously, what is the deal, is there crack in it?! I needed to know..
After another week of eating this incredible dressing on my salad 3x / day, I decided I would not leave the resort without the recipe. Big goals.
Thankfully, the amazing people in the kitchen wrote it out for me and I’m here to deliver the goods to you.
Here it is!
The best salad dressing recipe in the world:
NOTE: I haven’t tried my hand at making this recipe at home yet – so please let me know if you do! I will be trying it as soon as I get to a proper kitchen.
Also, when it comes to the exact amounts, I’d just try to wing it using this as a guideline – I don’t know exactly how big or small the “pieces” are that they recommend. So experiment!!! You can’t go wrong, really.
Zen Resort Magic Lemongrass Salad Dressing:
- 1/4 onion
- 3 pieces shallot
- 1/2 piece red chili pepper
- 1/4 (small) piece of ginger
- 2 capers
- 2 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 lemon
- 1 piece lemongrass
- 1 tsp balsamic vinegar
CHOP UP ALL INGREDIENTS ROUGHLY – and mix the chopped ingredients with the liquid ingredients, with a spoon. Look at the photo of the dressing – it is very choppy, not blended smooth. And this is the beauty of it.
One other little note – I’m not sure about the balsamic vinegar suggestion – I’m going to have to verify this once I get home and try it. I will edit this blog if I decide a different to use a different kind of vinegar. The only reason I say this is because the dressing wasn’t brown at all. So I’m curious to see how this will go.
