I made up this Baked Mexican Wontons recipe yesterday – I wasn’t sure what to expect, but turns out it is delicious (and definitely boyfriend-approved). I first got the idea of cooking with wonton wrappers from Heidi over at 101 Cookbooks, and they are surprisingly easy to use (no deep fryer necessary!) Although the process can get a bit messy, its totally worth it!
My goal here was to make a Mexican-themed dish that was vegan but could be made non-vegan as well. The great thing about this recipe is that you can substitute whatever ingredients you want – meat, cheese, whatever. If you do use real meat/cheese, though – please use organic!
That being said, here’s what I chose to use to make my Baked Mexican Wontons:
- 1 pkg wonton wrappers
- 1 can vegetarian refried beans (Amy’s brand with green chiles)
- 1 pkg Smart Ground Mexican flavor vegetarian beef (optional – or use crumbled tempeh!)
- 1 pkg soft tofu
- 1 pkg organic taco seasoning
- Salsa & guacamole for dipping
Preheat oven to 400 degrees.
First, make sure you thaw your wonton wrappers so they aren’t frozen. You can find wonton wrappers in the freezer section of your grocery store.
Once thawed, set your wrappers aside and start making the filling.
Brown the vegetarian meat in a pan for a couple of minutes first with about 1/2 the packet of taco seasoning.
Put the veggie meat in a bowl and mix in the can of refried beans.
Add the soft tofu to the mix to make it a little creamier as if it had melted cheese in it. You can use regular cheese here if you wish, or none at all. Taste the mixture and add more taco seasoning if needed!
Once the mixture is done, you’re ready to fill up your wontons. This is the fun part.
Put a spoonful of the meat/bean filling onto your wonton and fold it over into a triangle. Press your fork into the edges to seal it, as shown in the picture below:
I put a little water on the edges to seal it further. You can use egg whites for this as well, but water works just fine.
Brush each wonton with a touch of olive oil, and transfer the wontons to a baking sheet. Cook at 400 for about 10 minutes or until the edges are browned, as shown here.
Drizzle your wontons with hot sauce. Serve with salsa and guacamole for dipping. The perfect party food!
