I came home tonight to find my boyfriend Leo hard at work in the kitchen making an incredible creation – Vegan Mexican Pizza! Of course, I grabbed my camera immediately and documented his every move so I could share it with you guys. :)
Here’s his step by step process of creating a delicious, indulgent, healthier version of the Taco Bell favorite – using organic ingredients. I assure you, it beats Taco Bell any day. Plus, its vegan, yo!
**Please note: most vegan meat/dairy substitutes are not a regular part of a whole foods diet. Use them as a treat, a once-in-awhile type of thing if you’re going to have them…and please buy organic/minimally processed/least amount of ingredients possible!
First step is to spread some non-dairy sour cream on an Ezekiel tortilla, and sprinkle it with scallions.
Spread on some vegetarian refried beans (organic Whole Foods brand used here)
Next, add some vegetarian meat crumbles (Boca brand used here). Leo sauteed these crumbles with onions, garlic and taco seasoning first.
Next…add some salsa and sprinkle vegan cheese on top! Leo used my new favorite – Daiya vegan cheese.
Now – sprinkle with fresh chopped tomatoes and onions, and pop these suckers in the oven on broil.
As soon as the cheese looks melty and the tortilla edges are starting to brown (less than 10 minutes), its ready.
Top with guacamole and drizzle with hot sauce and more scallions (or even better, cilantro – we were out). Cut into pizza slices and pat yourself on the back. You just made an awesome vegan meal.
