I thought I’d let you in on the meal I’ve made the last 2 days in a row. I named it Green Monster Stir Fry because it has THREE green components to it: kale, broccoli and avocado. This stir fry is super quick to make and incorporates things I make a point to eat in every meal, if I can: protein, vegetables and healthy plant-based fats! (Of course, whole grains are one of the biggies too…but you can add a grain to this dish later, if you want).
I used tempeh in this dish, but you can use whatever protein you want. Tofu, organic meat or eggs…whatever you like. I just happen to LOVE my tempeh….mmm mmm mmm.
Anyway, here are the ingredients. This made enough for 1 large portion.
-About 1/2 block of organic tempeh (veggie flavor by Lightlife)
-About 1 cup broccoli florets
-1/2 a yellow onion
-1 clove garlic
-1 handful of kale, chopped up
-1/2 lemon
-1/4 an avocado, chopped up
-1 tbsp or so of tamari
-sprinkling of cayenne
-sprinkling of black pepper
-small amount of oil for cooking (I prefer coconut oil)
Let’s go!
Add garlic, onions, broccoli, kale and tempeh to pan with a bit of coconut oil – or oil of choice, or water saute if you don’t want to use oil. Cook on medium heat for about 10-15 mins.
While everything’s getting nice and toasty, add your tamari – just enough to LIGHTLY coat the ingredients:
Add a dash of black pepper and a sprinkling of cayenne to give this dish some spice:
When the veggies are tender, the tempeh is browned, and everything seems nice and edible…pour it all into a bowl. Top it with the chopped avocado, and squeeze some lemon juice on top of it!
VOILA! A delicious, easy, quick meal bursting with healthy green delights. ENJOY!!
