I love when a great salad comes together unexpectedly. My mom and I came up with this recipe last night based on some ingredients she had around the house. The reason I decided to call it “Circus Salad” is because it has a bunch of random (but awesome) ingredients, kind of like a circus.
Also, my mom’s book club is currently reading the book “The Night Circus,” so I guess the word “circus” was in my head.
Anyway, this salad, to me, is perfect. It has sweet, crunchy, salty, creamy, and of course – healthy – written all over it. I love it because it has protein, healthy fats and greens.
The amounts you use of each thing will vary depending on how many people are eating it.
Here are the amounts for 1 person– multiply it for more.
Circus Salad:
- Mixed organic greens
- 1 chopped hard boiled egg
- 1/3 sliced avocado
- Small handful of raisins
- Small handful of crushed pecans
- Juice from 1/2 a lemon
- 1/2 tbsp olive oil
- Pinch sea salt
- Pinch black pepper
- Pinch cayenne pepper
It’s super easy to prepare and customize, too! My mom added grilled shrimp to hers, my dad added roasted chicken, and there was a little goat cheese and balsamic vinegar added at the last minute, too.
