I haven’t been cooking much recently due to lots of different circumstances (moving, traveling to London, etc). No cooking = no posting recipes here on Healthy Crush. Not cool! The other day, I had the brilliant idea to bring in my friend Robyn Youkilis from Your Healthiest You to give us a healthy recipe since I’ve been on hiatus. She’s the healthiest cook I know, and she and I have incredibly similar taste in food (healthy + amazingly delicious, of course).
This soft serve is the healthiest “ice cream” you could ever imagine. So healthy, in fact, that it only has 1 ingredient. I know this recipe is a mouth-watering favorite of Robyn’s clients. It’s amazing as it is, but here’s my personal addition to the recipe: CINNAMON. I think cinnamon and bananas go incredibly well together, and I know Robyn would agree. Give it a try. :)

Hey Healthy Crushers! Wow. What an honor. I am truly jumping up and down inside screaming – I get to share recipes on one of my favorite blogs??!! Yes I do. And I’m super excited as you can tell.
First, a moment to gush. I am proud to call Jenny my friend and colleague. I always find her posts fun, insightful and exactly what I want to be reading about so I was especially thrilled when she reached out to me to ask me to share one of my biggest hit recipes in my health coaching practice – my infamous banana soft serve.
This delicious treat is dairy free, sugar free, gluten free, “everything else you’re supposed to stay away from free”, and generally awesome on all accounts.
And it has one ingredient. Yup. ONE ingredient.
Bananas.
That’s it! Totally bananas, I know. ;)
All you need is a wee bit of planning ahead and you’ve got your new nighttime treat. So without further hesitation here is my infamous Your Healthiest You Banana Soft Serve. Enjoy!
Prep Time: overnight to freeze bananas
Cooking Time: 5 minutes
Yield: 3-4 servings
Ingredients: 4-6 frozen bananas
Optional add-ins:
Nut butter
Shredded coconut
Dark chocolate or cacao powder
Chopped dates
Directions:
1. Peel bananas (don’t forget this step!), chop in large pieces and freeze overnight in a storage bag or freezer safe container.
2. Remove bananas from freezer and allow to sit out for 2-5 minutes (you can skip this step but be sure to have a high powered food processor).
3. Blend bananas in food processor (A Vitamix should work too) for a full 5 minutes. You will need to stop and scrape down sides a few times during processing. Keep going until it looks whipped with a smooth and creamy consistency. You may start to doubt whether it will begin to look like ice cream but just keep going!
4. Serve and eat immediately or play around with additional fun add-ins. Enjoy!

What a great idea. I always eat frozen bananas but I love the idea of making them into soft serve. Delicious with almond butter and a little bit of raw honey.
