I spend so much time trying to come up with new, jazzy recipes that sometimes I neglect posting about my old favorites. The ones that I barely think about before making because they’re just so simple. This salad is one of those cozy favorites.
When I was working at an office job, there was this salad I would make all the time and eat at my desk. I loved it. I made it every day for months, probably. Now, whenever I eat it, I remember being at that desk looking at advertising contracts, deciphering ad code, listening to Mazzy Star on Pandora and putting together PowerPoint presentations. (Why am I getting so nostalgic for corporate America lately?! What goes on?!)
Anyway, at lunch time I’d head over to the local grocery store. I’d grab one of those boxes of organic mixed greens, an avocado, a lemon, and some raisins.
I’d swoop by the salad bar and get a little to-go cup of olive oil and balsamic vinegar and a shake of salt and pepper. Done! Then I’d go sit at my desk and play chef, chopping the avocado while my co-workers probably eyed me with skepticism. :)
It’s really good.
Favorite simple salad: (makes 1 large salad or 2 small salads)
- organic mixed greens – whatever amount you want to eat (the boxes I used to buy all the time, organic girl, were 5oz boxes)
- 1/2 avocado
- 1/2 lemon
- handful raisins
- 1 tsp olive oil
- 1/2 tsp balsamic vinegar
- shake of sea salt
- shake of pepper
Put mixed greens in a bowl with avocado, lemon juice, olive oil, balsamic vinegar, salt and pepper. Massage everything lightly into the greens. (NO, I didn’t massage it all with my hands when I was sitting at my desk at work, I’m not that much of a weirdo. I acted slightly civilized and used a fork).
Add raisins to the salad mixture and toss gently. EAT!
Other ideas to add to the salad for protein:
- chopped hard boiled egg
- crispy, spicy tempeh bits
- pumpkin seeds
- some type of fish?
