so I’ve been raw for a few weeks now, and it’s fun. i like it. i’ve had to tweak it here and there, and i’ve generally come to realize that i feel a lot better when the majority of my diet is fruits and vegetables, and minimal fats. when i go through an entire day with my only fat intake coming from avocados, I feel great!
It’s so hard to follow a mostly-fruits-and-veggies diet though. the gourmet/more fattening raw foods are so tempting – raw chocolate, flax snax/flax crackers, tahini, pumpkin seed butter, and of course things like nut meat “mexican food,” lara bars, almond sour cream, etc… I’ve been consuming less nuts over the past few days, and I feel better. My goal for this week is to try eating mostly fruits and veggies – and no gourmet nut products!! I want to get the majority of my fats from avocado and some flax seeds. And, I guess oils in minimal amounts for salad dressings. Read on….
One really random FYI – I have come to LOVE watercress. I crave it. I’m not sure if my body is telling me something, but I can’t stop eating watercress. Avocados + watercress in the same salad, I’m sold!!
In the spirit of veggie-loving, I wanted to make a list of a few of my favorite raw vegan salads in new york city. Keep in mind that I am only at the beginning of my journey so I’m sure there are many more amazing salads out there that I don’t even know about. Yippee!!
Here are my favorites so far:
1) Caravan of Dreams – Live Watercress Salad. AMAZING!! It has “Indonesian Trance” dressing which is out of this world.
2) Quintessence – Buddha Bowl – This one is extra fun, because you can add whatever you want to the salad. I like to add avocado (of course). The lemon & blended oils dressing is the way to go.
3) Souen – Avocado Salad – this may be one of the only raw things on the Souen menu (aside from the yummy juices – try the carrot ginger!). Get the Avocado Salad with a side of Tahini. Delicious! But one thing to note – the Souen on 13th street adds steamed broccoli to the salad. Remember to ask for it raw! And – The Souen on 6th Ave and Prince adds dill to their tahini – this makes me very happy. In fact, I tried to duplicate this recipe at home in my magic bullet. Tahini + lemon juice + dill + raw soy sauce = yum.
4) Mooncakes – Avocado / Watercress Salad. I got this salad with Soy-Lime Vinigarette, which isn’t raw. I’m sorry. But it’s close. And the salad will totally rock your socks off.
If anyone knows another amazing avocado salad (extra bonus points if it has watercress), send it my way!! happy eating. loves.
